What is the Filipino style of skewered pork BBQ?
Simply put this is a meat kebab that distinctly has sugar in the marinade to allow a sweet taste to each bite. The soy sauce in the marinade provides the salty portion, and to add a hint of spice pepper is also added to the marinade.
What’s the best type of pork cut to skewer and grill?
The best type of pork cut is pork butt. This is a cut that is found on the pig’s shoulder. The meat is marbled with fat which is perfect for the cooking processes as it will allow the taste of the meat to blossom.
Ingredients
- Pork Butt
- Bamboo Skewers
- Soy Sauce
- Vinegar
- 7-up or Sprite (7-up will be the traditional option)
- Oyster Sauce
- Brown Sugar
- Sesame Oil
- Salt
- Freshly Ground Black Pepper
- Garlic
- Thai Chili Peppers
- Banana Ketchup (optional)

Instructions
Prep: Rinse and drain the pork strips well. Blot with a paper towel to dry. Combine all marinade ingredients together in a large bowl and stir until the brown sugar is dissolved. Take 2 cups of the marinade and place in the fridge, this will be used to baste the meat during the grilling stage. Add in the meat to the large bowl with the marinade. Massage the meat in the marinade. Place the meat and marinade in the fridge for 5 hours. Best if you let it marinade overnight. Thread the slices of meat onto each skewer.
Cook: Preheat the grill with charcoal. Cook the pork skewers over the grill about 3 minutes on each side. Baste the meat with the marinade that was separated out of the larger mixture. Continue to grill and baste, ensure to turn on all sides to cook thoroughly. Place on a plate or tray.

What goes well with Filipino style pork barbecue skewers?
This barbecue typically is accompanied with a spicy vinegar dip and a side of plain white rice. To create the vinegar dip: combine 1 cup white vinegar, 4 peeled and minced cloves of garlic, half of a onion that’s been minced, salt and pepper to taste. To add in some spice place 4 chopped Thai chili peppers. Mix and enjoy!

Storage
